Istituto Italiano di Tecnologia (IIT) is associated with an edible, rechargeable battery prototype developed under the EU-funded ELFO Edible Electronics project. The device uses riboflavin as the anode, quercetin as the cathode, a water-based electrolyte, and an edible nori separator, encased in edible materials, with potential applications in in-body diagnostics, smart packaging, and edible electronics research led by IIT.
